Kitkat Chocolate Mini-Cheesecake



I grew up loving this chocolate. It's one of the chocolates that I always looked forward to eating whenever my parents come home from a long drive and there's a big bag of chocolates in their hands or when my grandparents, who lived in Canada, would have their package come in. It's one of those chocolates that you just can't get enough of once you start eating it.


Today, I'm sharing this simple Kitkat Chocolate Mini-Cheesecake! It's a wonderful balance of sweet and the taste of kitkat is just right!


HOW LONG IS THE SHELF LIFE?

  • Shelf life, when put in the fridge, can last to up to 10 days.

HOW TO STORE THEM?

  • In an air tight container either in the fridge.





Kitkat Chocolate Mini-Cheesecake

 

Makes: 16 Mini-Cheesecakes

Ingredients:


Graham Base:

❑ 1 1/2 Cup of Crushed Graham Crackers (about 9 Graham)

❑ 1/4 Cup of White Sugar

❑ 6 tbsp of Melted Butter

❑ 1/2 tsp of Vanilla Extract


Cheesecake Filling:

❑ 2 Blocks of 8oz of CreamCheese

❑ 1/2 Cup of White Sugar

❑ 2 Eggs

❑ 1/2 tsp of Vanilla Extract

❑ 2 tbsp of Melted Chocolate

❑ 2 Cups of Crushed KitKat Chocolate


Chocolate Ganache:

❑ 1/2 Cups of Chocolate

❑ 2 tbsp of Heavy Cream

❑ 1 tbsp of Butter


Toppings:

❑ Chocolate Ganache

❑ KitKat Chocolate

 

Directions:


STEP 1: Preheat the oven to 350°F and line your muffin tray with some parchment paper cups.

 

STEP 2: Make the Graham Base First.


Combine crushed graham, sugar, melted butter, and vanilla extract together.


Make sure everything is hydrated by the butter then equally distribute in your parchment paper cups, pressing them down.


Chill in the fridge while doing the cheesecake filling.

 

STEP 3: Make the Cheesecake Filling.


Mix together the creamcheese, sugar, eggs, vanilla extract, and crushed Kitkat chocolate until well-combined.

 

STEP 4: Scoop creamcheese batter into equal parts using either an ice cream scooper or even your measuring cup, depending on what you have.

 

STEP 5: Pop in the oven for about 16-20 minutes or until when shaken, the middle only jiggles a little bit.

 

STEP 6: Let it cool down for 10 minutes before adding the Kitkat Chocolate and Chocolate ganache.

 

STEP 8: Put in the fridge for about 2 hours before enjoying! :)
