Turtles Chocolate Mini-Cheesecake

Turtles Chocolate. Have you had that? It has chocolate filled with caramel and pecans. That's one of my husband's favorite chocolates and when he requested that I make my own recipe for this, I had to do it because I never really thought about it until he brought it up!


When the day came and I finally was able to make it, it was instantly one of his favorite recipes that I did, which is honestly something I'm proud of!


It's an easy recipe that you can do and has simple ingredients as well. It's very light and not too sweet which is perfect!


HOW LONG IS THE SHELF LIFE?

  • Shelf life, when put in the fridge, can last to up to 10 days.

HOW TO STORE THEM?

  • In an air tight container either in the fridge.





Turtles Chocolate Mini-Cheesecake

 

Makes: 16 Mini-Cheesecakes

Ingredients:


Graham Base:

❑ 1 1/2 Cup of Crushed Graham Crackers (about 9 Graham)

❑ 1/4 Cup of White Sugar

❑ 6 tbsp of Melted Butter

❑ 1/2 tsp of Vanilla Extract


Cheesecake Filling:

❑ 2 Blocks of 8oz of CreamCheese

❑ 1/2 Cup of White Sugar

❑ 2 Eggs

❑ 1/2 tsp of Vanilla Extract

❑ 1/4 Cup of Caramel Syrup

❑ 1 1/2 Cup of Crushed Pecans


Chocolate Ganache:

❑ 3/4 Cups of Chocolate

❑ 1/4 Cup of Heavy Cream

❑ 1 tbsp of Butter


Toppings:

❑ Chocolate Ganache

❑ Caramel Syrup

❑ Pecans

 

Directions:


STEP 1: Preheat the oven to 350°F and line your muffin tray with some parchment paper cups.

 

STEP 2: Make the Graham Base First.


Combine crushed graham, sugar, melted butter, and vanilla extract together.


Make sure everything is hydrated by the butter then equally distribute in your parchment paper cups, pressing them down.


Chill in the fridge while doing the cheesecake filling.

 

STEP 3: Make the Cheesecake Filling.


Mix together the creamcheese, sugar, eggs, vanilla extract, caramel syrup, and crushed pecans until well-combined.

 

STEP 4: Scoop creamcheese batter into equal parts using either an ice cream scooper or even your measuring cup, depending on what you have.

 

STEP 5: Pop in the oven for about 16-20 minutes or until when shaken, the middle only jiggles a little bit.

 

STEP 6: Let it cool down for 10 minutes before adding the chocolate ganache, caramel syrup and pecans on top.

 

STEP 8: Put in the fridge for about 2 hours before enjoying! :)
