Moist Chocolate Chip Muffins

I don't know why, but after taking a long nap, I just suddenly craved for some chocolate chip muffins because I wanted some chocolate chips + cupcake feels to it at the same time. And so here was born my recipe for these delicious and moist chocolate chip muffins.


Muffins are often perceived as, well, healthier, than cupcakes because they don't require as much sugar as cupcake does. I love how these are just the right amount of sweetness and how moist it is.


These are great to eat for breakfast or as a snack or even as a dessert after a meal! It all depends on you! I really love eating these with a huge cup of coffee!


HOW LONG IS THE SHELF LIFE?

  • Shelf life, when put in the fridge, can last to up to 8 days.

  • If put in the freezer, shelf life can last up to 30 days. Just microwave them for 30-45 seconds, covered with a wet paper towel, and ENJOY!


HOW TO STORE THEM?

  • In an air tight container either in the fridge or the freezer, depending whether you would like it as a meal prep or not.








Moist Chocolate Chip Muffins

 

Makes: 14 Muffins

Ingredients:


❑ 1/2 Cup of Melted Butter

❑ 1 Cup of Sugar

❑ 1 Cup of Milk (Room Temperature)

❑ 1 tbsp of Vinegar

❑ 2 Eggs

❑ 1 tsp of Vanilla Extract

❑ 2 1/2 Cup of Flour

❑ 1 tbsp of Baking Powder

❑ 1 tsp of Baking Soda

❑ 1 tsp of Salt

❑ 1 Cup of Chocolate Chips (or add more if you would like to!)



 

Directions:


STEP 1: Preheat the oven to 400°F and line your muffin tray with some parchment paper cups OR you can opt out the parchment paper and just butter or oil up your tray.

 

STEP 2: Add your Melted Butter, Sugar, Milk, Vinegar, Eggs, and Vanilla Extract together. Mix until well combined.

 

STEP 3: Add your dry ingredients which are Flour, Baking Powder, Baking Soda and Salt. Mix together.

 

STEP 4: Lastly, add your chocolate chips before mixing for one last time.

 

STEP 5: Scoop your muffin batter into equal parts using either an ice cream scooper or even your measuring cup, depending on what you have.


NOTE: You have the option to add more chocolate chips on top and a dash of brown sugar but this is totally optional!

 

STEP 6: Put your muffins in the preheated oven (400°F) for 5 minutes.

 

STEP 7: Lower the oven temperature to 350°F after and bake for another 10-13 minutes, depending on the size of your muffins.

 

STEP 8: Let it cool for at least 10 minutes before enjoying it! :)
