
Pancakes is one of my favorite sweet things to eat in the morning, if I do have the urge to eat it, and whenever I do it, I do it in the easiest way possible because who wants a lot of complications when it comes to making their breakfast?
So today, I'm sharing with you my Vegan "Buttermilk" Pancakes in which I usually do back home in the Philippines because if you actually live there, you would know that not every single store has buttermilk since it's not really a popular item that most Filipinos use.
This is a dairy-free recipe and if you want it without refined sugar, you can substitute it with any sweetener that you want with the same measurement!
HOW LONG IS THE SHELF LIFE?
Shelf life, when put in the fridge, can last to up to 5 days.
If put in the freezer, shelf life can last up to 3 months. Just microwave them for 30 seconds, covered with a wet paper towel, and ENJOY!
HOW TO STORE THEM?
In an air tight container either in the fridge or the freezer, depending whether you would like it as a meal prep or not.

Easy Vegan "Buttermilk" Pancakes for One
Ingredients:
❑ 1/2 Cup of Almond Butter (or any non-dairy milk that you would like)
❑ 1/2 tbsp of Vinegar
❑ 1 tbsp of White Sugar*
❑ 1/4 Cup of Water
❑ 3/4 Cup of All Purpose Flour*
❑ 1/2 tbsp of Baking Powder
❑ 1/4 tsp of Salt
Directions:
☞STEP 1: Mix the vinegar to the non-dairy milk that you like. Let it stay for around 2 to 3 minutes until it makes a "buttermilk."
☞STEP 2: Add the sugar and water to your "buttermilk" and give it a good stir.
☞STEP 3: Then add your dry ingredients which are flour, baking powder, and salt. Mix until it's well-combined.
☞STEP 4: Heat up your non-stick pan and spray a little bit of oil OR you can add around a 1/2 tsp of oil per pancake.
☞STEP 5: Scoop some batter to the pan and cover it, let it cook in a VERY LOW HEAT for around 5 minutes.
☞STEP 6: Once the pancakes are golden brown on the other side (or depending on how you would like your pancakes to look), flip it over and let it cook for about 3 more minutes.
☞STEP 7: Serve with any fruit toppings that you want and maple syrup!
