Easy & Moist Banana Bread

This is one of the recipes that I think I've tried when I was starting, alongside the chocolate chip cookies, because our house always had bananas and it's one of my mom's favorite things to eat.


This recipe that I'm sharing with you today is one of the moistest banana cake there is, and it's very easy to do. It's a great recipe if you want something our of your very ripe banana; it's good to eat for dessert or even for breakfast sometimes since this recipe isn't as sweet as normal banana breads are (because that's how my mom likes it!).


HOW LONG IS THE SHELF LIFE?

  • Shelf life, when put in the fridge, can last to up to 8 days.

  • If put in the freezer, shelf life can last up to 30 days. Just microwave them for 30-45 seconds, covered with a wet paper towel, and ENJOY!


HOW TO STORE THEM?

  • In an air tight container either in the fridge or the freezer, depending whether you would like it as a meal prep or not.








Easy & Moist Banana Bread

 

Makes: 1 Banana Bread / 10-12 Slices of Banana Bread


Ingredients:


❑ 1/2 Cup of Milk

❑ 1 tbsp of Vinegar

❑ 1/2 Cup of Butter (Softened)

❑ 1/2 Cup of Brown Sugar

❑ 1/2 Cup of White Sugar

❑ 1 1/2 Cup of Mashed Ripe Bananas (About 3 Big Ripe Bananas)

❑ 1 Egg

❑ 1 tsp of Vanilla Extract

❑ 1 1/2 Cup of All-Purpose Flour

❑ 1 tbsp of Baking Powder

❑ 1 tsp of Baking Soda

❑ 1 tsp of Salt



 

Directions:


STEP 1: Preheat the oven to 350°F. Oil and place a parchment paper on your bread pan as well.

 

STEP 2: Add the room-temperature milk and vinegar together and let it sit for a while.

 

STEP 3: Add your softened butter, brown sugar, and white sugar in a bowl and cream them up together.

 

STEP 4: Add your milk and vinegar concoction, the mashed ripe bananas, egg and vanilla extract to the mixture and give it a good stir until well-combined.

 

STEP 5: Add your dry ingredients which are: flour, baking powder, baking soda, and salt, to the mixture and give it one last stir.

 

STEP 6: Pour your batter in the bread pan.

 

STEP 7: Place your bread pan filled with the batter in the oven and cook for around 50-55 minutes, depending on your bread pan size.


NOTE: To check whether it's cooked or not yet, poke a stick (toothpick) in the bread and if it comes out clean then it's cooked, if not, then pop it back in for a few more minutes (depending on how battery the banana bread is still) until it comes out with a clean stick.

 

STEP 8: Let it cool for at least 10 minutes before cutting it into equal sizes.
