
One of the things that I really love was coffee. Coffee has always been my best friend, especially during thesis time back when I was in university. These coffee cake muffins are perfect for breakfast, it's not too sweet, plus the coffee glaze on top really gives it the extra kick of coffee taste for this muffins.
It's easy to do and if you want, you can store it in the freezer as a meal prep! Either reheat them or eat them as a cold muffin; just don't forget to seal them tightly so the bread doesn't go stale and dry.
HOW LONG IS THE SHELF LIFE?
Shelf life, when put in the fridge, can last to up to 8 days.
If put in the freezer, shelf life can last up to 30 days. Just microwave them for 30-45 seconds, covered with a wet paper towel, and ENJOY!
HOW TO STORE THEM?
In an air tight container either in the fridge or the freezer, depending whether you would like it as a meal prep or not.

Coffee Cake Muffins with Crumbs & Coffee Glaze
Makes: 12 Muffins
Ingredients:
Coffee Cake Muffins:
❑ 1 1/2 Cup of All Purpose Flour
❑ 1/2 Cup of Brown Sugar
❑ 1/4 tsp of Baking Soda
❑ 1/2 tsp of Baking Powder
❑ 1 tsp of Cinnamon Powder
❑ 1/2 tsp of Salt
❑ 3/4 Cup of Milk (Room Temperature)
❑ 1/2 tbsp of Vinegar
❑ 1/3 Cup of Vegetable Oil
❑ 2 Eggs

Directions:
☞STEP 1: Preheat the oven to 375°F and line your muffin tray with some parchment paper cups OR you can opt out the parchment paper and just butter or oil up your tray.
☞STEP 2: Add the milk, vinegar, oil, eggs, and brown sugar together. Mix them until well-combined.
☞STEP 3: Then add the dry ingredients which are: flour, baking soda, baking powder, cinnamon powder, and salt. Give it another mix.
☞STEP 4: Scoop your muffin batter into equal parts using either an ice cream scooper or even your measuring cup, depending on what you have.
☞STEP 5: Add the crumbs on top of the equally divided muffin batter.
☞STEP 6: Place in the oven and cook for about 16-22 minutes, depending on how big your muffins are.
NOTE: To check whether it's completely cooked, poke a stick in the middle of one of the muffins and if it comes out clean, it's done!
☞STEP 8: Once the muffins are cooked, let it cool down for about 10 minutes before glazing them with the coffee glaze.
